Easy Chicken Satay & Crispy Rice Recipe

With the dramatic change in our lives. C and I are trying to change a lot of things to get a new normal. With that obviously comes meal times. We have started watching cookery programs on TV together and looking online for inspiration, One we are watching shares therecipes with Lidls. We have tried a couple and have a few more we are going to be trying soon. First up is my Easy Chicken Satay & Crispy Rice Recipe.

Crispy Chicken Satay

This is such a quick and easy recipe which is perfec for busy households.

Ingredients

1 tbsp Sesame Oil
1 tbsp smooth peanut butter
2 tbsp Coconut Milk
1/2 tbsp Soy Sauce
1/2 tsp ginger puree
pinch of chilli flakes
2 Spring Onions sliced
Cooked chicken
Edamame Beans
1/2 lime juiced
Salted Peanuts

1 pouch rice – we used pepper rice

Method

  • In a bowl, combine ½ tablespoon sesame oil, the peanut butter, coconut milk, soy, ginger and chilli flakes.
  • Heat the remaining oil in a non stick pan and cook the rice over a medium – high heat. Let it sit on the bottom of the pan to crisp up. This should take around 2-3 minutes and you will hear it start to pop and become crispy
  • Finley chop the spring onions and shred the chicken.
  • Stir the spring onions and the chicken into the rice. Then add the adamame beans, lime juice and half of the sauce from the first step. Stir through to combine.
  • Serve the rice in bowls and top with the rest of the sauce and top with the salted peanuts.

This recipe is different to what we would normally make. It was fresh and took minutes to prepare and to make.

We both enjoyed this and it will become a regular meal feature for us.

At the moment it is all about meals that are easy as my concentration and ability to do anything more complex is way beyond my control at the moment

  2. I am glad you’ve found some recipes, especially during such a hard time. You don’t want to have to think too much about cooking and meal prep. This sounds tasty.

    1. Honestly my joy of cooking has gone totally out the window. Which is why I made a pact with C we will cook and prepare meals every evening and try at least 1 new recipe a week which is new to both of us
