As it is Sunday why not head to the kitchen and do some baking so you can enjoy and celebrate National Chocolate Cupcake Day fully.

You can try my fail proof recipe for chocolate cupcakes that are soft, moist, rich and chocolatey, with a fluffy chocolate buttercream topping.

Ingredients For Cupcakes

150g Plain Flour
200g Caster Sugar
40g Cocoa Powder
1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda
2 Medium Eggs
120 ml Milk
100ml Vegetable Oil
1 tsp Vanilla Extract
120 ml Hot Water or Hot Coffee

How To Make

  • Preheat the oven to 180°C
  • Line a 12-hole cupcake tin with paper cases
  • Add all the dry ingredients to a bowl and mix together
  • Add the wet ingredients – eggs, milk, oil and vanilla and mix until smooth
  • Then carefully stir in the hot water or coffee – the mix will be quite thin but that is fine (coffee brings out the chocolate flavour)
  • Spoon the mixture evenly into the 12 cupcake cases
  • Bake for around 18-20 minutes until they are cooked – this will depend on your oven
  • Allow to cool

Ingredients For Buttercream

100g Unsalted Butter – which is softened
200g Icing Sugar
25g Cocoa Powder
1-2 tbsp Milk
1/2 tsp vanilla extract – this is optional but I always add

How To Make

  • Beat to softened butter until creamy
  • Sift in the icing sugar and cocoa powder and the vanilla extract with 1 tbsp of milk
  • Beat the ingredients together until light and fluffy – you can add more milk if needs

You can either pipe or just spread the butter cream on the top decorate and enjoy – just make sure the cakes are completely cool before icing
