My Airfryer Bread Pudding

If you love baking my airfyer bread pudding is so quick and easy to make and smells amazing. My recipe can be halved or you can do what I do and make two batches and freeze half down.
How to make it
Ingredients
400g of white bread
600ml of milk
500g of mixed fruit – I preferred to use raisins
100g caster sugar
50g self raising flour
1 and half tablespoons of mixed all spice
2 eggs beaten
100g melted butter
How To Make
- In a large bowl tear the bread into small pieces
- Add the milk and leave it to soak for 10 minutes
- Once the bread has been soaking. mush together into a paste consistency. Do not worry if it seems too wet this is ok
- Stir in the fruit of your choice, sugar, flour, mixed spice, eggs and melted butter and mix together
- Pour into a tray that fits your air fryer. I used a 7″ spring lock tin, and sprinkle with sugar. This does make a large batch, so I did mine in two batches.
- Place in a pre-heated air fryer at 150 for 70 minutes
Why Do I Think It Resonates
It is simply memories of when we were growing up. I was lucky to come from a baking background. On my dads side they were all old fashioned bakers. On my mums side amazing home cooks. So I grew up with lots of baking all around me.
Bread pudding is that comfort food to me, that we do not see much of these days which is sad. Whenever, I saw it in the shops I would buy some. I had never tried making it before as always thought it would be too difficult. Until I found this recipe that is a cheats way to make it. But the results are amazing.
When it cooks the whole house smells of memories from my childhood.
Do you have any recipes that remind you of your childhood?
