Quick & Easy Meal Ideas For Busy Students

If your child is heading off to University for the first time. If like me, you know they will be fine but as a parent you will worry. I am sharing some Quick & Easy Meal Ideas For Busy Students

A cheap shopping list for a student can look like this –

  • Pasta
  • Rice
  • Noodles
  • Eggs
  • Tinned tomatoes
  • Baked beans
  • Frozen vegetables
  • Cheese
  • Tortillas
  • Pesto
  • Soy sauce
  • Garlic
  • Potatoes

Creamy Tomato Pasta

Creamy Tomato Pasta

Ingredients

Pasta
Tin of Chopped Tomatoes
Garlic
Cream Cheese
Herbs

How To Make

  • Cook your pasta and drain
  • In a separate pan heat the tomatoes with the garlic and simmer for 5-10 minutes
  • Stir in the cream cheese
  • Add the pasta and herbs and mix together and serve

Cheesy Beans on Toast

Cheesy Beans on Toast

Ingredients

Baked Beans
Bread
Grated Cheese

How To Make

  • Toast the bread
  • Heat the beans
  • Pour the beans over the toast and add grated cheese

Chicken & Cheese Quesadillas

Ingredients

Wraps
Cooked Chicken
Grated Cheese
Sweetcorn
Salsa

How To Make

  • Add the ingredients to half of a wrap and fold
  • Heat a pan and fry for 2-3 minutes per side

Egg Fried Rice

Egg Fried Rice

Ingredients

Cold Rice
1-2 eggs scrambled
Soy Sauce

How To Make

  • Either use a microwave rice or buy a bag of white rice and cook your own
  • Cook a batch of rice to freeze down 600ml of salted water to the boil, add 400g rice once boiling cover and simmer on lowest heat for 10 minutes, then turn off heat and leave for another 1o minutes – freeze what you do not use
  • In a pan add some oil and break in the eggs to scramble
  • Add the rice and soy sauce and stir together
  • You can add other ingredients at this stage as well

Loaded Jacket Potato

Jacket Potato
  • For quickness you can microwave until your potato is soft
  • You can also then coat in oil and sprinkle salt and pop in a hot oven for crispy skin
  • Add butter and topping of choice

Some ideas for toppings

  • Beans + cheese
  • Tuna + mayo
  • Chicken + cheese
  • Cottage cheese + sweetcorn

Or

  • Once the potato is cooked cut in half and scoop out the centre
  • Mix with butter, grated cheese, onion and ham (or anything you have)
  • Add back to the skins and pop in the oven until cheese is melted

Peanut Noodles

Ingredients

Cooked Noodles
1 tbsp Peanut Butter
1tbsp Soy Sauce
Lime or Lemon Juice
Sweet Chilli Sauce
Splash of Hot Water

How To Make

  • Heat a pan and add the all the ingredients and heat through
  • You can add peanuts for crunch, cooked chicken and vegetables as well

  2. As someone who isn’t a fan of cooking these are great for me as well. I’d have done so badly as a student if I lived away from home haha x

  3. I love cheesy beans on toast! Sometimes we have it your way (cheese on beans on toast) and sometimes we melt the cheese on the toast under the grill and then add the beans (beans on cheese on toast) 😆

    1. This is comfort food me and my husband used to love if we wanted something but nothing too much. Not tried beans on cheese on toast will have to try that
