Everyone knows about Banana Bread and it was that recipe everyone was baking at one point, C loves banana bread and it was something I seemed to be making weekly at one stage. But, was happy to as it was all she fancied eating at times. I have since found a recipe for Easy Air Fryer Banana Bread Muffins.

Ingredients
1 ripe banana – mashed
1/2 cup sugar – I use brown for flavour
1 egg
1/4 cup vegetable oil
1 cup self raising flour
1/2 tsp baking soda
How To Make
- Preheat the air fryer to 160
- In a bow add the mashed banana, sugar, egg and oil and mix together
- In a separate bowl combine the flour and baking soda
- Gradually mix the dry ingredients into th banana mixture and fully combine
- Pour the batter into silicone muffin moulds – about 3/4 full
- Place the moulds in the air fryer for around 10-12 minutes
- Once cooked remove and repeat until all the muffins are cooked
I was intrigued by this recipe as it is different to my normal recipe as I do not add oil. I have baked cakes before with oil so know this is a thing. They do taste great but I may tweak slightly next time. The thing with baking is that yes you do need to be more rigid with ingredients. But. you can tweak slightly to your own taste.
These are perfect for when the kids are off school and tell you numerous times a day they are hungry. You can prepare and have these cooked in no time.

A good way to use up over ripe bananas
It is we either have none in or they go over ripe

They are not quite the same as banana bread and I may tweak the recipe slightly next time but a good substitute
The smell of these muffins wafting through the kitchen must be divine. I loved the smell of Mum’s banana cake cooking.
