Quick and Easy Banana Bread Recipe

While my daughter was on holiday, she had a banana bread which was unlike the banana bread that I usually make.  With her being on a Disney Cruise, I searched American banana bread and came across this recipe. We love banana bread in our house, but they often go a bit too ripe before we have eaten them, I have found a way to Use Up Old Bananas With My Banana Bread Recipe.

Banana Bread is so easy to make and tastes amazing. The kids love to get involved and help and love mashing the bananas. Then adding the mashed bananas to the other ingredients. I have always baked with my kids, as I did when I was growing up. It is important that they not only learn to cook. Also baking teaches them so much more, Plus it has the added benefits of having something tasty to eat. Once all the clearing up has been done.

Bananas have so many uses, and something we always have in our house.  If the kids are hungry a banana will give them energy and satisfy them without having to reach for sweets or biscuits.  Plus they can be used in a variety of recipes, to make great tasty treats.

Ingredients

5 x Ripe Bananas

1 3/4 cups self raising flour

1/2 teaspoon of salt

1 teaspoon baking soda

1/2 cup of melted butter

1 teaspoon vanilla extract

2 eggs

3/4 cup dark brown sugar

Method

Pre heat the oven to 180 and grease a loaf tin.

In a bowl mash the bananas

In another bowl add the eggs, butter, vanilla extract and brown sugar and mix together. Then add the mashed banana and mix well.

Then add the flour, salt and baking soda and mix together until everything has mixed in.

Pour into the loaf tin and sprinkle some brown sugar on top to caramelise cook for 1 hour, turning half way through cooking.

I turned half way through cooking and then checked again after 15 minutes, to see if it was ready or needed the extra cooking.

It is a lovely moist cake with a crunchy topping, this is much nicer than the banana bread that I usually make, but unfortunately is not the same as the one my daughter had on her holiday.  So the search continues.

Do you have a recipe for banana bread, I would love to try it. I have seen a few recipes where you can add chopped nuts, or chocolate chips. I am yet to try these yet. Although we always have nuts and chocolate chips in the cupboard for cookie baking days. My next attempt is my friends Banana, Walnut and White Chocolate Cake which sounds amazing.

  1. Delicious! Until the first Covid lockdown, I’d never heard of Banana Bread but can well understand how it became so popular.

    Growing up,, my mother – and many others – used to bake Banana Cake and ice it with chocolate icing. The aroma wafting out of the kitchen would draw in the whole family to devour a large slice each even before the cake had properly cooled!

  4. Oh this recipe sounds wonderful with the vanilla. Such an easy bread/cake to make and tastes wonderful.

  5. We love banana bread. The recipe I use is from an American cookbook, it includes 1 cup of plain yoghurt which means the end result is very squidgy.

      1. The other half never lets me throw away bananas so he can make banan bread, but most end up but i end up throwing them as he never gets round to doing it!

  7. I’ve never been a big fan of bananas but I don’t mind them in the form of a cake or something where you don’t notice the texture as much. It seems like everyone is making banana cake x

    1. My granddaughter hates bananas I think it is the texture with her, I will have to try her on banana bread when she is next over

  8. I made banana bread last week but it was a no bake version. I used a steamer to cook it. Turned out really soft and moist. My kids loved it. I guess that means I have to make it again.

    1. I have not heard of a steamer version, that sounds different will have to look out for a recipe for that
