One of my favourite desserts is cheesecake, especially cherry cheesecake. Which is very hard to find, honestly, you rarely find it. As much as I love cheesecake, I have not made it in years, and when I say years. It must be over 20 years.

On Sunday, I was browsing online and found quite a few cheesecake recipes. I popped out and got the missing ingredients I needed and C and I got ready to make Airfryer Baked Cheesecake.
Before I start none of the photos are our creation. We, well I had a slight mishap. I did not have a springlock cake tin small enough. So used one of my silicone cake tins which was a squeeze. I did not think about getting it out of the airfyer. So was not looking as nice as it could have done. But it is all about the taste though.

Ingredients
200g Digestive Biscuits
60g melted Butter
500g cream cheese at room temperature
125g caster sugar
25g Plain Flour
2 eggs
1/2 cup sour cream
1 tsp vanilla extract
Topping of choice
How To Make
Step 1
Crush the biscuits. The easiest way is to put in a sealed bag, grab a rolling pin and keep going until they resemble crumbs.
Pour into a bowl and add the melted butter and combine.
Then transfer to the bottom of the cake tin and flatten down.
Place in the airfryer at 200C for 5 minutes or until golden brown.
Step 2
In a bowl add the cream cheese and whip until light and fluffy (I use an electric whisk).
Add the sugar and flour and mix into the cream cheese
Add the eggs one at a time, whisking in between
Stir in the sour cream and vanilla extract.
Step 3
Pour the cheesecake mixture over the biscuit base.
Place back into the airfryer and cook at 170C for 10 minutes then turn down to lowest setting no lower than 110C and check every 10 minutes.
The outside should feel set and the middle wobbly.
Once cooked leave to cool,once cooled you can add the topping of your choice. Obviously, I used cherry pie filling.
Then place in the fridge (preferably overnight) to set fully before serving.
This is so quick and easy to make and far nicer than those you buy. We will be making this more often, once my new cake tin arrives.
