Quick and Easy Liver and Bacon Casserole

As you know by now I am all about ease when preparing our family meals.  Like a lot of families, time can be against us with our busy lifestyle.  I am sharing with you my quick and easy meals, and also sharing my cheats along the way. Todaay I am sharing my Quick and Easy Liver and Bacon Casserole.

I know a lot of you will probably not read on for liver and bacon, I can not stand liver. Even preparing it I have to use tongs as I do not like touching it. I also know that it is not really comfort food weather, but it is always nice to have a selection of recipes to go to.

Before we go on, I will explain how my family have liver and bacon.  My husband is the only one of us who likes liver, he has liver and bacon.  I also add sausages and I have sausage and bacon and C has sausages.

Quick and Easy Liver and Bacon Casserole

Ingredients

Lambs Liver

Bacon

Sausages

Onion

2 x Beef Oxo cube

Seasoning

Bisto Reduced Salt Gravy Granules

Flour

Oil

Method

Step 1

In a bowl add enough flour to coat the liver and season.

Coat the liver in the flour (the amount of liver you use really does depend on the person and their meal sizes)

Step 2

In a heavy bottom dish heat the oil

Add liver and cook on each side – remove to one side

Next add the Sausages and cook – remove to one side

Add bacon and cook – remove to one side

Step 3

Add the onion (I always use frozen chopped onions) and fry until soft.

Add the liver, sausages and bacon to the onions and add the crushed oxo cubes.

Pour in boiling water and stir through

Add a lid and simmer on a low heat

Step 4

While the liver and bacon is simmering I prepare my potatoes as always serve with mashed potatoes.

Step 5

Remove the liver and bacon from the heat

I usually dish up the meat and then thicken the gravy with the gravy granules and pour over the meat and mash.

As much as i do not like liver, both myself and C love the gravy it makes.  Sausages and mash is one of her favourite meals. This is so quick and easy to make and is lovely when the weather is cold and msierable outside.

    I must admit it turns my stomach thinking of liver but I would love this recipe for the family with sausages instead.

    You know, a lot of people dislike liver. To such an extent, that I think it’s rather fallen out of favour and off the family meals’ menu. But this looks absolutely mouth-watering! Another way to prepare liver (always lambs)is to poach it gentlly in tomtato juice. Surprisingly tasty.Gill.

      I do not like liver, neither does C, but we love the gravy it makes. I can cook three meals in one with my liver and bacon casserole

    I would be the same as you with the tongs! I have never cooked liver but my partner does love it so thanks for the recipe and maybe I will be brave enough to cook it for him one day haha.

    My mum used to make us eat liver once a week, and I used to hate it! It’s a good idea to incorporate an alternative in to the casserole

    Gosh this takes me back we used to have this when we were younger and I call it punishment food but strangely my daughter loves it

      I call it punishment food but do love the gravy it makes, which is why we all have slightly different forms of it
