As you will have already guessed by now, I love quick and easy meals to serve up for dinner. I have already shared some of my family favourite recipes with you, carry on to the end of the post to see them. I am now sharing another quick and easy dinner my easy chicken risotto recipe.
I love risotto, but always found it boring standing ladling in the stock in one or two spoonfuls. If you like risotto you will love this recipe. I actually got the recipe from the bbc food website a long time ago.
2 tbsp of oil
1 onion, cut in half, coarsely grated
2 garlic cloves, grated
250g risotto rice
100ml white wine or water
1 litre/1¾ pints chicken stock cube, made with 1 stock cube
250g cooked leftover chicken, skin removed, cut into small pieces
75g hard Italian-style cheese, finely grated
freshly ground black pepper
boil the kettle and make up chicken stock, made up with 1 stock cube
If using raw chicken cook off and put to one side
heat the oil in a pan and add onion and garlic – for quickness I use a handful of frozen diced onion and a spoon of lazy garlic
Add the risotto rice and stir and coat with the remaining oil and onion and garlic
Add half of the wine or water and mix
Pour in the stock and simmer and stir frequently until most of the stock has absorbed and you are getting a creamy consistency
Add the chicken, rest of the wine and black pepper to taste and add salt if needed. We have found that by using one stock cube we need to add a little bit of salt
Once the required consistency add the butter and grated cheese, stir and remove from the heat
You can add peas as well, but my family all moaned at me for doing this so I tend to not add them now.
This would work exactly the same for making a mushroom risotto.
Also great for popping in the microwave for a tasty lunch the next day.
