Making Meal Times Easy

With back to school fast approaching, we will be back with our busy lives of school runs. Not forgetting all the after school clubs. Which means along with everyday life we have more and more put on us as we juggle home life and taxi of Mum and Dad. I have been looking at ways to make meal times easy with the help of Strong Roots. I am also sharing a couple of quick and easy meal ideas that work great with chips for a quick meal.

As much as we love to dish up a fresh and nutritious meal for our families every day. The reality is, there are days where we just need something quick and convenient. We can still do this, but in am more nutritious way.

I recently reviewed a selection of Strong Roots products, which are perfect for those times when we just do not have enough time in the day.

No matter how you like your chips there is something for everyone. Even if you need a quick no fuss meal. Chips, egg and or the cauliflower hash browns or spinach bites makes a quick and tasty option.

We all know that kids love their chicken nuggets. How about making your own? They take no time to prepare and taste so much nicer.

Classic Breaded Chicken

Ingredients:

4 boneless and skinless chicken breasts
1 cup all purpose flour
2 eggs
1 cup breadcrumbs
Salt & Pepper to taste
1 tsp garlic powder
1 tsp paprika
1/2 cup grated Parmesan cheese
Olive oil

Instructions:

  1. Preheat oven to 200° or heat a skillet over medium heat with a few tablespoons of olive oil.
  2. Decide on whether having chicken breasts, nuggets, goujons , escalope and prepare
  3. Season the chicken breasts with salt, pepper, garlic powder, and paprika.
  4. Set up three bowls – one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
  5. Dip your chicken breast in flour, then dip in eggs and then coat in the breadcrumb mixture.
  6. If baking, place chicken on a greased baking sheet, spray with cooking spray, and bake for 20-25 minutes, flipping halfway. If frying, cook each side for about 4-5 minutes until golden brown and fully cooked.

Parmesan Crusted Chicken

Parmesan Crusted Chicken

Ingredients:

4 boneless and skinless chicken breasts
1/2 cup mayonnaise or Greek yogurt
1/2 cup grated Parmesan cheese
1 cup breadcrumbs1 tsp garlic powder
Salt & Pepper to taste

Instructions:

  1. Preheat oven to 190°C
  2. In a small bowl, mix mayonnaise, Parmesan cheese, garlic powder, salt, and pepper.
  3. Spread the mixture over the top of each chicken breast.
  4. Sprinkle breadcrumbs evenly over the top, pressing gently to adhere.
  5. Place the chicken breasts in a greased baking dish and bake for 25-30 minutes, until the chicken is cooked through and the topping is golden brown.

  1. I love the sound of the cauliflower hash browns. Im not sure the children would prefer these but they sound delicious. All their products look delicious.

  3. The cauliflower hashbrowns is a staple in my house. The kids like them like normal hashbrowns but they add a bit of veg to their diet.

    1. I do love sweet potato fries, what I love about these over the others I have purchased is that they do not burn. They cook evenly and taste amazing. Usually I find that they dry out and start to burn where others are undercooked. These will be my only sweet potato fries from now on

    1. I do use frozen chips etc as always good to have them in for when you just do not have the time. I love that they are helping the planet also and have my favourite sweet potato fries in their range

  8. Spinach Bites is my fav, the crisp shell giving way to a delicious mix of spinach and herbs that made me smile instantly. Each bite felt like a little victory, knowing I was treating myself to something tasty and nourishing at the same time. By the time I finished, I was already thinking about when I could enjoy them again, happy to have found a snack that felt good in every way.
