Easy Raspberry Tiramisu

You may remember I recently made an Orange Tiramisu for my Dads birthday. After a bit of tweaking I turned out to have a more orange flavour. That same week my Mum found a recipe for an Easy Raspberry Tiramisu in her magazine, which I said I would make for her birthday.

This is so quick and easy to make, sadly we did not have any fresh raspberries from our raspberry bushes at the time so I had to buy them.

Ingredients –

500g mascarpone cheese

vanilla essence

4tbs single cream

2 tbsp caster sugar

300ml strong coffee

6 tbsp Tia Maria

sponge fingers

200g fresh raspberries

Cocoa powder

Directions –

  • In a bowl beat the mascarpone cheese to soften, then stir in vanilla essence (I love vanilla so just guess the amount proband 4 drops). Also add the single cream and sugar.
  • Into a shallow bowl add the coffee and Tia Maria Tip – you can use camp coffee or a half and half mix for that coffee flavour
  • One by one briefly soak the sponge fingers and arrange at the base of your serving dish. Then layer on half the mascarpone mix and a layer of raspberries.
  • Repeat the above step
  • Sprinkle with cocoa powder and cover and chill for 1-2 hours minimum

When making this we realised we had no Tia Maria in the house. So just made it without, as the only time I drink tia maria is in a liquor coffee when out. We probably will not have it in. This had mixed reviews as my mum loved it and the strong coffee base, I found it a overwhelming with the coffee and it did just need something to break it slightly. Saying this it was still lovely

Next time we are going to try Baileys, either mixing into the mascarpone mix or to the coffee and soaking into the sponge fingers.

This can be made with a range of different fruits and perfect to make something quick and easy but tastes amazing.

Sadly I did not get any pictures of it, so definitely need to make it again

  4. You wouldn’t have to twist my arm to try this. I know you said you didn’t have any raspberries on your own bushes at the time you made this, but how cool that you even have raspberry bushes!

    1. Honestly it does taste amazing, I must admit my Mum got the raspberry plants at the time I laughed at the sticks she brought home and planted. Stopped laughing when they started producing fruit

    1. I always thought it was harder to make, and always loved homemade versions in restaurants. Now I know how quick and easy will be making more often

  11. Tiramisu is a fabulous dessert so easy recipes are always very welcome. I don’t have spirits or liqueurs in the house as they wouldn’t get used so skipping the Tia Maria sounds good to me.
