As you know I have a love of baking. My Dad and Grandad were both Bakers who were traditional Bakers. My Mum and Grandma were always baking as I grew up. There is no surprise I now have a love of Baking which I am so happy my Daughter loves baking with me. I was recently asked to review Fearne & Rosie jams. Which is why I am sharing some Baking Treats With Fearne & Rosie.

Founded in 2019 by Rachel who was an ex teacher and is passionate about creating a healthy change for children and families. Rachel is on a mission to reduce the amount of sugar that is consumed in households. Fearne and Rose have developed a range of reduced sugar jams to offer a healthier and tastier choice for children and their families.
I was sent a selection of their range, which are all favourite jams in my home
- Strawberry Jam
- Blackcurrant Jam
- Strawberry Super Jam
- Raspberry Jam
With the above flavours in mind, I set to bake up some great treats that are a little different to jam tarts and sponge cakes.
Victoria Sponge Muffins

A favourite in my house is a classic Victoria sponge cake. I have found Victoria Sponge Muffins in the supermarket which are a favourite treat I love. Not wanting to be beaten I decided to try these for myself
Ingredients
200g Unsalted Butter
200g Caster Sugar
4 Large Eggs
200g Self Raising Flour
1tsp Baking Powder
1tsp Vanilla Extract
2tbs Milk
Strawberry Jam
Icing
100g Unsalted Butter – softened
140g Icing Sugar
1/s tsp Vanilla Extract
How To Make
- Preheat your oven to 180°C
- Line a 12-cup muffin tin with paper muffin cases.
- In a large bowl, cream together the butter and caster sugar until light and fluffy. This should take about 4-5 minutes.
- Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Sift the self-raising flour and baking powder into the mixture, and gently fold it in with a spatula or metal spoon.
- Add the vanilla extract (if using) and milk, and fold until the batter is smooth.
- Spoon the batter evenly into the muffin cases, filling each to about a third
- Put a teaspoon of jam into each muffin case
- Fill the muffins with the rest if the cake batter
- Bake in the preheated oven for 18-22 minutes, or until the muffins are golden and spring back when lightly pressed. A toothpick inserted into the centre should come out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
- Once completely cooled make the buttercream – beat the softened butter until smooth, then gradually add the sifted icing sugar, beating well after each addition.
- Add the vanilla extract and continue to beat until the buttercream is light and fluffy.
- Pipe on top of the muffins
- You can add sprinkles if desired

Jam-Filled Thumbprint Cookies

Ingredients
1 cup of butter – softened
1/2 cup of sugar
2 cups self raising flour
1/2 tsp vanilla extract
1/2 cup of jam – whatever is your favourite
Instructions
- Preheat oven to 175
- Cream butter and sugar together until light and fluffy.
- Add vanilla extract and mix well.
- Gradually add flour and mix until combined.
- Roll dough into 1-inch balls and place on a baking sheet.
- Press your thumb into the centre of each ball to make an indentation.
- Fill each indentation with a small amount of jam.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool on a wire rack before serving.
Jam Crumb Bars

Ingredients
2 cups self raising flour
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp salt
1/2 cup cold butter cubed
1 large egg
1 tsp vanilla extract
3/4 cup of jam – whichever is your favourite
Instructions
- Preheat the oven to 175 and grease an 8×8-inch baking dish.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract, mixing until the dough comes together.
- Press half of the dough into the bottom of the prepared baking dish.
- Spread the jam evenly over the dough.
- Crumble the remaining dough over the top of the jam and sprinkle with chopped nuts if using.
- Bake for 30-35 minutes, or until the top is golden brown.
- Let the bars cool completely before cutting into squares.
Of course as we all know there is nothing nicer than hot buttered toast spread with our favourite jam. We have tried all flavours sent and they all taste great. I love the fact that they are healthier than the normal jams we buy, and will be buying these in future.

I love baking too and baking with jam is even better. I found an old recipe for Maids of Honour with a pastry base, jam filling and a sponge top, delicious. Those jam cream bars look lovely, must try that recipe

The jams are all lovely just on toast, but also great for baking with we are loving the Jam Crumb Bars
There are so many fun ways to use jam in baking! I love thumbprint cookies, but with peanut butter in the cookie so it’s like peanut butter and jelly.
Hadn’t thought of trying that, even though I am the only one in the family who does not like peanut butter everyone else would love that combination

Victoria sponge is one of my all time favourite cakes, my parents eat more jam than we do, but sometimes hot toast and jam is just what you need

We love to bake too. It is great that these are reduced sugar, as jam does contain so much! I love the sound of the blackcurrant jam – that is definitely one that I would love to try!

I got the idea from muffins I used to buy from our local supermarket. Another way to add the jam is carefully cut a hole and put the jam in and then reseal the cake but I found it easier this way
I would like to try the thumbprint cookies. I like those from the store, but it is so much better when homemade.
