Easy Recipes To Keep The Family Cool

We finally have our Summer weather back. No matter how hot it is, the family still want to be fed and have cool drinks to hand. Which is why I am sharing some quick and easy recipes that will help keep the family cool.

Watermelon Mint Salad

Watermelon Mint Salad

Ingredients

4 cups of watermelon – cubed
1/4 cup fresh chopped mint leaves
Juice of 1 lime
1/4 cup crumbled feta cheese – optional

Instructions

  • In a large bowl, combine the watermelon cubes and chopped mint leaves.
  • Squeeze the lime juice over the salad and toss gently.
  • Top with crumbled feta cheese if desired.
  • Chill in the fridge for 20 minutes before serving.

Cucumber Yogurt Dip (Tzatziki)

Cucumber Yogurt Dip

Ingredients

1 cup Greek Yogurt
1/2 Cucumber – grated

1 tablespoon olive oil
clove gallic – minced
1 tablespoon lemon juice
Salt and pepper to taste

1 tablespoon fresh dill or mint – chopped

Instructions

  • Grate the cucumber and squeeze out excess moisture using a paper towel.
  • In a bowl, mix the yogurt, grated cucumber, garlic, lemon juice, olive oil, and dill or mint.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator for 30 minutes before serving. Enjoy with pita bread or fresh veggies.

Frozen Fruit Smoothies

Frozen Fruit Smoothies

Ingredients

1 cup frozen mixed berries – strawberries, blueberries raspberries -anything you like
1/2 banana

bout 1/2 cup of yogurt – plain or flavoured
1/2 cup fruit juice
1 teaspoon of honey if required

Instructions

  • Place all ingredients in a blender.
  • Blend until smooth and creamy.
  • Pour into a glass and serve immediately. You can also freeze the mixture in popsicle molds for a cool treat later.

Caprese Skewers

Ingredients

Cherry tomatoes
Fresh mozzarella balls
Fresh basil leaves
Balsamic glaze

Instructions

  • Thread a cherry tomato, mozzarella ball, and basil leaf onto a skewer.
  • Repeat until all ingredients are used.

Mango Sorbet

Mango Sorbet

Ingredients

3 ripe mangoes – peeled and diced
1/4 cup of sugar – to tase
Juice of 1 lime
1/2 cup of water

Instructions

  • In a blender, puree the mangoes with sugar, lime juice, and water until smooth.
  • Pour the mixture into a shallow dish and freeze for about 3 hours, stirring every 30 minutes to break up ice crystals.
  • Alternatively, use an ice cream maker following the manufacturer’s instructions.
  • Serve in bowls or cones.

No matter how hot it is there is always something refreshing and light you can make to eat or drink.
