Easy Homemade Chicken Soup

In our household, when we get ill, eating is the last thing we want to think about.  This past week or so we have all suffered with this cough and cold that seems to be doing the rounds.  Now poor C has it on top of her other illnesses.

She is a nightmare with eating anyway, and prefers to graze, but when she is ill it is harder to find something she wants to eat that is also getting some nourishment into her, but she always eats my homemade chicken soup.

Homemade chicken soup  helps the body with heat, hydration, and nutrients. Chicken soup is rich with vitamins and minerals, which are useful against common ailments like the common cold, the flu, and food poisoning.

One thing C will always eat when suffering with cold virus is my homemade chicken soup.  With C I have to be careful with what I put in it as that child (although now a few weeks from becoming an adult) will know.  I make a basic soup for her and if we are also having it will add other bits and pieces.  It is quick and easy to make as well.

Ingredients

Chicken Breasts – I used two

Diced Onion – I used my cheats frozen onion

Garlic

Ginger

2 x chicken stock cubes

2 x carrots sliced

potatoes cut into small cubes

Sweetcorn

Cream (optional)

Method

Step 1

Add the chicken breast to a pan of water and boil until the chicken is cooked, if you have left over chicken that is already cooked you can skip this section.

Once cooked remove the chicken from the pan, shred the chicken and leave to one side.

Step 2

Add the potatoes, onion, stock cubes, vegetables and garlic to the pan and cook through until the potatoes are cooked.  This will act as your starch and thickening ingredient.

Step 3

Remove the pan from heat and then blitz to a smooth liquid and add the shredded chicken and sweetcorn. At this stage stir in cream if using.

Step 4

Season and serve

This really is a soup C loves, the garlic and ginger are added per your preference. As I said this is just the basic soup which you can add whatever you want or have in.

    Oh wow! This does sound so easy to make. I think I might have to give it a try. It really is soup weather at the moment. x

      It is so easy and you can just add bits to it to make it yours as well, as making for C need to keep it pretty bland

    Chicken soup is so comforting. And to find it is also good for healing makes it an even better choice.

    Would you believe I’ve never attempted to make my own soup before? This actually sounds pretty easy though!

    I do love a good hearty soup and chicken is a good one, but I don’t think I’ve ever attempted to make my own soup before x

      I do have a soup maker that I use, if making a quick soup for lunch, this one I do on the hob as make a bigger batch. I made another for her yesterday and changed it slightly and it was amazing

    I’m a vegetarian so never had chicken soup before. But my kids love it. Never thought to make my own though.

      Probably not a good choice as a vegetarian, but you can change to vegetable stock cubes ( i did one vegetable and one chicken stock cube in my recent one I made), and add vegetables you can either blitz of do half and half

    This sounds yummy and a lovely warming soup to enjoy this winter. I’ve not had chicken soup in so long. This would make a welcome change to the menu at home.

      It is all I seem to be making at the moment for C, although she has just popped out with me and got some treats and having a break from the soup as had it at lunch and chose something different for dinner

    I have not had much luck with previous attempts at making soup, but this sounds simple. Will have to give it a try

      I think once you have the right base you will find it easy, we prefer thicker soups which the potatoes naturally thicken it

      Thank you, it is just a bit of trial and error at times to find what works best but this always helps us to feel better
