As you know I love baking and trying new recipes. It is the one thing I do when I need to de-stress, or keep busy. I recently purchased a huge box of cherries as my family love them. I have to admit my favourite fruits are Summer fruits. As we were trying to get through this huge box. I decided to look for recipes to use them with. Which is where I found Summer Fruits Muffins. A bit misleading but have made two types of muffins.
Last week, C was on a college trip and she always takes a packed lunch. I thought I would make some cherry muffins to take with her.

Cherry Muffins

These are so quick and easy to make and a perfect way to use up fresh fruit. Plus kids will love helping make these yummy treats.
Ingredients –
1 1/2 cups of Self Raising Four
3/4 cup of white sugar
1/3 cup of oil
1/3 cup of milk
1 large egg
vanilla essence
1 cup of pitted cherries cut in quarters
1 teaspoon of sugar to top the muffins if you wish
Directions –
- Pre-heat the oven to 200 and line your muffin tin with paper liners
- De stone and cut your cherries
- Mix the flour and sugar together in a large mixing bowl
- Add your oil, milk, egg and vanilla extract and mix together until all ingredients are mixed together. If a little too stiff you can add a tiny bit of milk to make it a less stiff
- Add your cherries and stir in gently
- Spoon the muffin batter into your paper liners at around 2/3 full
- Sprinkle with sugar if you wish
- Bake in the oven for 20 minutes. I baked mine for 10 minutes and then checked and turned the tray around. I then check at 5 minutes to make sure they do not over bake

As I already said I do love my Summer fruits and had a huge punnet of nectarines. On Sunday while trying to keep my mind occupied. I had a thought of could I use nectarines. So we made one batch of cherry muffins and then tried a batch of nectarines. I used 2 nectarines finely chopped, but next time may use 3.
They are just as nice and if honest am not sure which I prefer. Now I am thinking of what other fruits I can use. Do you have any suggestions?

Using self raising flour does make the recipe easier. So far both flavours have been a hit

Gosh, they look delicious. The recipe looks nice and easy, too. Good idea to try fruit when it is inexpensive and abundant. I quite like trying to use overripe bananas in cakes, cookies and muffins. Much better than throwing them out when the family won’t eat them.
They are lovely and do keep lovely and moist for days. I love using bananas and never through them away when over ripe

I had not thought of nectarines either, and after a discussion with my Dad who was a baker. We decided to give it a go, the next question was skin on or off so I tried with skin on and it is fine
