Quick & Easy Breakfast Cookies

Breakfast is very hit and miss in my house. Depending on what time we get up really does depend on whether we eat breakfast or not. C, is the same. I did always ensure she had breakfast when going to school. But now she is older, she is like us. Which is why I had to try these quick & easy breakfast cookies.

Luckily, her college timetable means she is only in at 9 one day a week, and they have amazing selection of things she can eat at break time.

I am always looking for recipes, as you know. I recently came across Banana, Blueberry and Oat breakfast cookies. Did you know, I never have Blueberries in and is a joke in our house. C was about 5 and tried them at school. She has always loved her fruit and begged me to get some in. They were more expensive but she promised me she would eat them. She had 2. I do not like fresh blueberries but do love them cooked. So this recipe intrigued me.

You may have already seen this recipe, my lovely friend Melanie from Melanie’s Fab Finds. Is always sharing recipes usually for cakes and desserts, that we both drool over. She share this recipe and it is so easy.

Ingredients

2 Ripe Bananas
1 Cup Porridge Oats
Half a cup of Blueberries
1/4 Cup Honey
1 tsp Vanilla Essence

How To Make

  • Pre-heat the oven to 175 C
  • In a bow mash the two bananas
  • Then add the oats, blueberries, honey and vanilla essence and mix together
  • Onto a pre-lined baking tray drop spoonfuls of the mix and flatten slightly
  • Bake for 15 minutes or until the outside have browned.

No idea how long these last, I store in a sealed Tupperware lined. They are very moreish and tasty, and the perfect fix for giving you something healthier for breakfast on the run or mid morning. Well anytime of the day really. We are on our second batch already.

They are lovely still warm from the oven, or once cooled.

I am now thinking of a variety of different flavours to play around with.
