Easy Turkey Stuffed Peppers

As you will already know, C has started the Mediterranean diet. This has meant not only coming up with new meal ideas that she will like, but also finding recipes that are easy for her to make for herself. This has meant I have been looking at recipes and coming up with new meal ideas. One of her new favourites is easy turkey stuffed peppers.

As I know a lot of you like the Mediterranean diet, or are looking for new meal ideas. I will be sharing our latest recipes we have been trying. Plus also using an air fryer and our little cheats to make it even easier to make.

I found the recipe for the stuffed peppers on BBC Good Food site. It was quick and easy to make and C loved it.

Ingredients For The Stuffing

Lean Turkey mince

Half a chopped onion – I use frozen chopped onion

1 clove of garlic grated – I use very lazy garlic

1 tsp ground cumin

400g can of chopped tomatoes

1 tbsp tomato puree

1 chicken stock cube

150g green vegetables – we used frozen spinach

Olive oil

Step 1

Heat 1 tbsp olive oil in a pan and fry the mince for 2-3 minutes. Keep stirring to break up the chunks. When cooked empty onto a plate

Step 2

Wipe the pan clean add more olive oil. Add the onion and garlic stirring for a few minutes and then add the cumin. Add the mince back to the pan and mix the onion and garlic through.

Next add the chopped tomatoes and tomato puree and crumble the stock cube. Cook through for 3-4 minutes then add in the frozen spinach and seasoning.

Step 3

Prepare the peppers by cutting in half and de-seeding.

Put a liner in the air fryer and rest the peppers in and spoon in the turkey mixture and add some grate cheese on top.

I cooked for about 10-15 minutes on 200.

The rest of the turkey mixture I let cool and froze for use another day.

We are loving finding new recipes, and C is expanding her diet and eating a much more varied diet than she used to eat. The great thing with finding recipes online is that you can adapt them to add things you like or just leave out what you do not like. A lot of people stuff peppers with savoury rice, they are so versatile. What do you stuff your peppers with?

  2. I absolutely love stuffed peppers, but I never thought of putting turkey in them. I would love to try this out for myself and my family for dinner one of these nights.

  7. I love stuffed peppers. I stuff mine with vegetable couscous and sometimes I add some mince meat in there, or like you I top it with cheese. You can even break an egg on top of your pepper before baking it to have a lovely baked egg on top.

  9. I love stuffed peppers because they’re so healthy. Making them with turkey is a great way to really lean into that healthy aspect.

    1. It is too tomato based for me, I have never liked them since being forced to eat them when at school, but so glad C is not like that as they make a great base for a lot of dishes

      1. You can always try roasted butternut squash instead of tomatoes. Just mash it up a bit to create a more puree texture and that will help bind the other ingredients
