One thing I know I love about cooking, is taking the easy option when I can. Creating a nice home comfort dinner for my family, is something I love doing. But I hold my hands up I am an impatient cook. Which is why I have found the perfect easy slow cooked roast beef dinner. I do use my slow cooker for this, and it is obviously no good for those who love their beef rare. This is a great meal for those, who have a busy day as it takes minutes to prepare.

I always buy beef when it is on offer. I got a lovely joint on offer last week, which I cooked the other day.

What you will need
1 x beef joint – remember you do not need best quality for this
2 x beef oxo cubes – crumbled
diced onion – I use frozen diced onion
chopped garlic – I use lazy garlic
seasoning
hot water
- Place your beef joint in the slow cooker – I do not seal mine
- Add the stock cubes, onion, garlic and seasoning
- Cover with hot water
- Turn slow cooker on low and leave it for the day – I do usually turn it over at some stage during the cooking time.

Cook your roast potatoes as normal. I usually make my own Yorkshire puddings, but cheated this time and had ready made ones, which you just pop in the oven for 5 minutes. I used frozen veg, and also fresh cabbage, which I follow my mums way of doing it.
- Chop the cabbage, then add to boiling salted water for a minute and drain
- In the pan melt some butter and add some ground black pepper
- Add the cabbage and mix through
Preparing the beef
- Remove the beef and cover until ready to portion
- I use bisto reduced salt granules to thicken the gravy to desired thickness. I use reduced salt as normal makes it too salty
Serve your meal.
You will find you have beef and gravy left over. Once it has all cooled down I portion and freeze down and usually get another 1-2 meals from it. Depending on size of the joint and who is here for dinner. I then have another few quicky and easy dinners in the freezer.

I have never cooked beef in my slow cooker, but I will definitely give it a go now, as it sounds so quick to prepare before work!
This has never failed me and is always so tasty as well
That has left my mouth watering. I’m not a big red meat eater but slow cooked like this or stewed and you can count me in.
