Easy Fruity Chicken & Sweet Potato Curry Recipe

As you know C and I are making sure we are eating healthily. Especially as we are both suffering a lot lately. With everything being such a chore, we decided to try a few new recipes a week. This way we can make meal times fun again. Last week I shared our Satay Crispy Rice recipe. Today I am sharing another new recipe we have found Fruity Chicken & Sweet Potato Curry.

We are getting our inspiration from online and tv shows. This recipe was inspired by one we saw on tv and is shared on the Lidls website.

C and I love sweet potatoes, this was something I did not have often as my husband was not a huge fan of them. So using them in new recipes has been a huge hit for both of us.

Ingredients

1 tsp lazy garlic
1/s tsp ginger puree

2 Chicken Breasts cut into slices or cubed
Sweet potatoes – this depends on the size of them and the amount you are cooking for

mixed veg – either frozen or fresh
1 chicken stock cube
Olive Oil
Frozen Diced Onions
1/2 tsp ground tumeric
1 tsp curry powder – I used mild
Greek Yoghurt
Mango Chutney

Method

  • Peel the sweet potatoes and cut into small chunks
  • Disolve the chicken stock in 400ml of boiling water
  • Add oil to a pan over a medium heat and add the diced onions -1-2 handfuls, garli and ginger
  • Cook for about 5 minutes before adding the tumeric and curry powder. Stir and cook for about 1-2 minutes
  • Add the chicken, sweet potato and mixed veg and stir to coat well in the spices.
  • Pour over the chicen stock and season if required with salt and pepper and bring to the boil
  • Turn down the heat and simmer for 15-20 minutes. Until the chicken is cooked
  • Before serving add greek yoghurt ( this is by eye) just to give it a creamy finish
  • Stir through a tablespoon of mango chutney

Serve with rice and/or naan breads

This is also perfect for freezing down so you have a quick and easy meal for another day.

  6. I need to try making something like this at home. My husband always says he doesn’t like curry, but he just doesn’t look loads of spice, and a recipe like this would be easy to adapt to be low spice x
