Following on in my quest to cook more meals from scratch. Following on from the success of my spaghetti Bolognaise with my family. This week I am sharing an easy authentic chilli con carne recipe.

This recipe is quick and easy to make, which you probably expected from me by now.
Ingredients
A little sunflower oil for frying
600g lean diced beef
1 onion diced – I use frozed diced onion and pop a handful in
6 garlic cloves crushed – I use Lazy Garlic and add a couple of teaspoons
1-2 large red chillies chopped – I use Lazy Garlic and added a teaspoon
1 tsp ground cumin
1tsp coriander
1 tsp cinnamon
1 heaped tsp ground instant coffee
1 beef stock cube
30g plain chocolate
2 tbs tomato puree
2 bay leaves
1 tin kidney beans – drained
Boiling water
1-2 tsp smoked paprika
How To Make
- In a large pan on the hob that has a lid. Heat a little oil and brown the beef. Once browned transfer the beef to bowl
- Add a little more oil to the pan and stir in the onions and cook until soft. Then ad the garlic, chilli, ground cumin, corriander and cinnamon. Let the spices cook and mix together
- Add the beef back to the pan
- Add the coffee, stock cube chocolate, tomato puree, bay leaves and beans to the pan
- Pour over enough boiling water to cover and stir to make sure the chocolate has melted
- Bring to the boil and then pop the lid on
- Turn the heat down to the lowest setting and let it simmer away stirring once in a while for around 3 hours.
- Once cooked add 1-2 teaspoons of smoked paprika to taste and stir in.
You can serve with rice or tortillas
My easy never fail rice

400g White Rice – Long Grain or Basmati
600ml water
Salt
- Boil the water in a pan and add salt to season
- Once the water is boiling add the rice
- Bring back to the boil and cover with a lid and turn down to the lowest setting for 10 minutes
- After 10 minutes do not take the lid off just turn off the heat for another 10 minutes.
- Result perfect steamed rice
For years I tried every method there was to cook rice and it always failed. This method has never let me down. I just freeze down what is left over to heat up another day. Just make sure you leave the lid on the whole time,




I love a good Chilli Con Carne,mine has to be spicy though
I do love chilli con carne, sadly C does not so may batch cook this to have for me or may just make it when cooking for others now
I normally do a bean chili instead of a meat one, but this recipe sounds very good! Thank you for sharing such an authentic recipe.

We love chilli as well, the salt is just for taste rather than anything

I never realised that you could add coffee and plain chocolate! Must give it a lovely flavour!
A friend of mine always adds coffee and chocolate to hers
I always have trouble with the rice so this sounds like a perfect way to try and cook next time I do it. Ive never heard of coffee in the recipe but it can only add to the taste and it sounds like your family loved it.
Cooking rice this way has never failed me just remember to not uncover at all and leave the lid on.
