Easy Pesto Pasta Recipe

Having a family means we have to prepare a meal every day.  Which if like my family, they get fed up with the normal meals we dish up.  I am always on the look out for new, quick and easy meals to prepare. Today I am sharing a family favourite, my Easy Pesto Pasta Recipe.

Whilst making dinner last night, I was preparing a family favouriteAMP which is quick and easy.  It was a recipe I have adapted from a Hello Fresh recipe we tried years ago.

Sadly I did not take any pictures, as only thought about sharing the recipe later in the evening.

If you have a fussy family, who are always moaning about having the same old meal.  Or if you are looking for something that is quick and easy to make you will love this recipe. I call it my sausage pasta.

Ingredients I always have in the cupboard is a jar of pesto, pasta shapes of varying variety and sausages.

The amount of ingredients you use will depend on how many you are cooking for.  But generally you know how much pasta etc you cook for your family.

Dried Pasta

Chilli Flakes

Pine Nuts

Tender Stem Broccoli

Grated Parmesan

Preparation

Put a pan of salted water on to boil

Trim the broccoli

Remove skin from the sausages and cut into 3-4 pieces

How To Make

  1. Once the water is boiling add the broccoli and blanch for a couple of minutes and then remove the broccoli and add the pasta to the water. I use a variety of pasta shapes you can use whichever you want.
  2. While the pasta is cooking in a wok add the sausage pieces and cook through
  3. Once the pasta is cooked add about 6 tablespoons of the water to the wok and then drain.
  4. Add the broccoli and chilli flakes (these are optional) to the sausages
  5. Add 2-3 spoons of pesto and add the drained pasta and mix to coat – you can add more if needed this really is down to personal preference
  6. Add the toasted pine nuts – I usually buy a bag and toast them and then keep them is a sealed container so they are always available – again these are down to personal taste and can be left out
  7. I add a bit of grated parmesan to the mix – you can leave this out.
  8. Serve

This is such a quick and easy meal to make, and one my son always asks for when he is home.

An interesting twist on a classic dish. Pine nuts are really expensive but I love them on pasta and salad.

I really enjoy pesto but my other half not so much, our go-to quick dish is a tomato-based sauce as we just add chopped tomatoes and seasoning and it’s good to go x

I love pesto and surprisingly my children love it too even though it is green, I usually make mine with walnuts. I will try adding chilli flakes next time

I love pesto but the one you buy in the supermarket isn’t as fresh as one you make at home. Definitely bookmarking this to try

I have never been brave enough to make my own pesto, I always have a jar in the cupboard and if planning meals will buy fresh pesto to use
