Easy Air Fryer Chicken Fajitas

As you will know I have recently purchased an air fryer, and loving finding new recipes to try out. I have wanted one for such a long time, and finally decided to buy one. This week I am sharing an easy chicken fatitas recipe, that I also found on the BBC good food site, also including my little cheats to make it easier and quicker for the busy household.

For my household, it is not only trying to find new recipes to try. It is also finding new meal ideas for C who is finding the Mediterranean diet is improving her health. Also meals that she can prepare for herself quickly and easily, especially as starting college next week.

C eats a lot of chicken, I usually cook up a batch of chicken breasts and then portion them down and freeze them for use another time. This saves a lot of time, preparing her meals if she has something different to us and gives her a lot of scope for what she has that day.

Ingredients

Cooked Chicken breast sliced

Sliced red onion – I use frozen sliced red onion and get out what I need

Pepper sliced – you can use a mixture or stick to one colour pepper

Smoked paprika

Ground Coriander

Pinch of ground cumin

Garlic cloves crushed – I use very lazy garlic

Olive oil

Lime juice

2 tortillas – I use wholemeal for C

Sour cream

Guacamole

Grated Cheese

Method

In a bowl mix the –

  • Smoked paprika
  • Ground coriander
  • Garlic
  • Ground cumin
  • Lime juice
  • Olive oilAMP

This is all to personal taste.

Add the chicken, onion and pepper to the mix and coat evenly.

Cook for 5 minutes in your air fryer check, return to the heat if needed.

Warm tortillas for 30 seconds in the microwave and then split the mixture between the two add the toppins and serve and enjoy.

This is one of the meal C asks for a lot, it is also so quick and easy to prepare. It does make it quicker having the chicken already cooked. They do taste great and the thing I love about them is you can mess around with the marinade to experiment with flavour, Or add a bit of heat if you like yours a little more spicy.

I have a cupboard full of herbs and spices, which are all coming into use at the moment. I am also loving getting C into the kitchen as we try new things, while having a catch up.

I love this! Super quick and makes me wonder why on earth I didn’t think of this. Will definitely try this on those days I can’t be bothered to cook or during the half terms when the kids need a quick healthy lunch
