You will have seen a few weeks ago, I shared a variety of recipes that we were trying for C. She wanted to try the Mediterranean diet and so had been finding meals that she could also make. These are all meals that can be made using a conventional oven.
I have been playing with my new air fryer, and we decided to try tray bake in ours. As what could go wrong and there was no reason it should. I keep reading that whatever you use your main oven for, you can use an air fryer.
The beauty of a tray bake, is that you can literally put anything in it. Look around your kitchen and see what needs using chuck it all in and cook. C, although getting more adventurous, is still a little fussy.
I use liners for my air fryer, which saves cleaning. Although they are so easy to clean.
We used
- Chicken – cubed
- Sweet Potatoes – peeled and cubed
- Peppers
- Red Onion – I use frozen sliced red onion
- Spinach – frozen spinach defrosted
- Baby plum tomatoes halved
- Olive Oil
- Seasoning – whatever you fancy putting in
Preparation
Cube the chicken into small pieces and add to a bowl.
Peel and cube the sweet potatoes into small cubes as this helps with the cooking time, and add to the bowl.
Defrost the frozen spinach and add to the bowl
Add peppers we added red, yellow and green
A handful of sliced red onion and tomatoes
Add some olive oil and seasoning of your choice. I have a lovely chicken seasoning mix which C wanted to use in it. Mix it all together.
Once mixed together I poured into the air fryer liner and placed in the air fryer. A top tip I keep seeing is to warm your air fryer first. I usually do this while I am preparing what I going to cook in it.
I think I cooked at 180-200 for 20 minutes. Check and give it a shake or stir after about 10 minutes. You can then check to see whether the temperature is right or needs turning up or down. Check again, I have found that cooking times are something you need to play with until you get used to your air fryer and not use the suggested times.
C loved it and said it tasted just as good as when we make it in the oven. Doing it in the air fryer, means we make enough for one meal unlike when we make it in the oven and make a larger batch. Which she reheats the following day.
I have now found a few groups on Facebook and have been trying out some new recipes which I have found on there. Including bagels, which I made on Monday morning and were a total disaster.
