My Low Carb Diet

I mentioned in one of my recent weekly update posts, that I have started a new low carb diet, now usually anything that has the word diet in, and I start off positive and by the end of the week have cheated.

Luckily my husband is on board with this, and we are doing this together.  For me one of my biggest downfalls is fresh bread, but coming from a baking family that is hardly a surprise to anyone.  I also suffer with IBS and this has been something I have had to live with daily and know one of my triggers is bread.

I started off by researching and found a great website where they have a lot of lovely sounding meal ideas and recipes.  We decided on our start date and in preparation I sat looking at recipes and ordering the ingredients I needed.

The first week was great, and I enjoyed making new meals everyday and my husband also enjoyed trying something new everyday. We have enjoyed every meal apart from one which was a huge disaster and I will not be trying again.

I have to say cauliflower is my now must have, and I use it a lot in my daily cooking now.

Some of the meals we have enjoyed is

  • Cauliflower cheese and bacon
  • stuffed peppers with homemade chilli
  • creamy chicken masala curry and cauliflower rice
  • creamy chicken and cauliflower casserole
  • chocolate brownies – made without flour

These are 4 firm favourites of ours and dishes we have enjoyed a few times, I had heard about cauliflower rice previously to starting this diet, and just thought it sounded disgusting, no idea why as I do like cauliflower.  When I made it, I served my husband and said I have no idea what this is going to be like.  We both loved it and if I am honest it is easier than cooking ordinary rice.

I will say I have not weighed myself, as to me this is more of a lifestyle change rather than about losing weight, I feel we are eating healthier and I can see changes in my body as well as with my IBS.  I also do not feel as if I am missing out on anything.

I will admit to having potatoes when we have had a roast as my husband would go into a major sulk without them, but the odd time is ok.

I will update again, to let you know how we are getting on and to see if we have found any more meals we like.

      Thank you, we are not strictly low carb as if we are out we will eat what we fancy etc, but am really enjoying the new meals I am cooking. I have found myself feeling better on it, as it has helped my IBS and my husband is enjoying it as well x

  2. I eat Low Carb all the time and all the recipes on my blog are low carb, grain and gluten free. I do it for my autoimmune condition but it also makes me feel less bloated and sluggish! My recent Egg Fried Cauliflower Rice is a personal favourite!

  3. Eat breakfast like a king, lunch like a prince, and dinner like a pauper… that is my attitude to carbs basically. I eat plenty of good carbs at the start of the day then gradually decrease. It honestly really helps my tummy

      I am the other way around if I am honest, but it is working and am loving the new recipes I am cooking x

  5. I find it amazing how versatile cauliflower is, isn’t it? Off the top of my head I’ve had cauliflower rice, cauliflower pizza bases and cauliflower fritters and they’ve all been really tasty. Good look with the diet!

      I am amazed at what you can do with cauliflower (apart from the obvious), we love cauliflower rice even will go as far as saying I prefer it to normal rice x

    I love cooking with cauliflower and we often make cauliflower crust pizza!! A low carb diet really helps me to lose weight!

      I have not tried pizza with cauliflower crust yet but it is on my to make list, I have noticed a difference but still not weighed myselfx

  7. I wish you and your husband much success on this journey. I didn’t know bread was a trigger of IBS. Losing weight is my number one goal this year so I’m hoping to make it happen. My boyfriend is on board so I’m hoping that helps!

      It does help if you are both on board, bread is a trigger for me as is stress, so I am suffering at the moment, but just changing to low carb I can see a difference x

  9. I’m doing a sort of low carb diet too, it’s easier than any other diet. Good luck with it!
