Banana Bread Recipe

While my daughter was on holiday, she had a banana bread which was unlike the banana bread that I usually make.  With her being on a Disney Cruise, I searched american banana bread and came across this recipe.

5 x Ripe Bananas

1 3/4 cups flour

1/2 teaspoon of salt

1 teaspoon baking soda

1/2 cup of melted butter

1 teaspoon vanilla extract

2 eggs

3/4 cup dark brown sugar

Pre heat the oven to 180 and grease a loaf tin.

In a bowl mash the bananas

In another bowl add the eggs, butter, vanilla extract and brown sugar and mix together, and then add the mashed banana and mix well.

Then add the flour, salt and baking soda and mix together until everything has mixed in.

Pour into the loaf tin and sprinkle some brown sugar on top to caramalise cook for 1 hour, turning half way through cooking.

I turned half way through cooking and then checked again after 15 minutes, to see if it was ready or needed the extra cooking.

It is a lovely moist cake with a crunchy topping, this is much nicer than the banana bread that I usually make, but unfortunately is not the same as the one my daughter had on her holiday.  So the search continues.

      It tastes amazing, and was very easy to make. Luckily I have measuring cups and used my silicone loaf tin so that makes life even easier.

      I have made it a lot in the past, as it is a way of using up over ripe bananas. This is a lovely moist one and taste lovely x

    I love Banana Bread/Cake and this looks amazing. It actually sounds fairly similar to the recipe I’ve found online and used but the American measurements always confuse me.

      I usually move away from recipes with american measurements as they confuse me, but as I have measuring cups thought I would give it a go and found it quite easy x

    I LOVE banana cake… I use the exact same recipe handed to me from a friend and it is delicious! Great recipe!

      It is lovely, I have tried so many recipes for it, this is a new recipe and everyone loved it. My daughter always loves mashing the bananas x

    i love banana bread. I love it with chocolate chips and peanut butter icing. Just melt some peanut butter and mix it with icing sugar. It’s heavenly.

    We love banana bread in this house. It always comes out as more of a banana stodge, but that’s just how we like it. Yours looks great ad we will for sure have to give it a go. Thanks for sharing x

      We always love banana bread, this one was a bit like a stodge more of a bread pudding sort of texture, but I think that is due to the amount of banana that goes in it x

    I’m not normally the biggest banana loaf fan but with a crunchy topping it sounds much more appealing! Yum!

      This is more of a bread pudding texture, everyone kept going back for more and the crunchy topping did make it that bit nicer x

      Thank you, if you dont like bananas you wont like this unfortunately, unless you like the taste and not the texture then this will be ok. Luckily I love bananas x

    I looooooooove Banana Bread! When I was a kid my mum used to make the BEST Banana cake with thick chocolate icing – total sugar overload. Yum!!!!!

      Not tried with vegetable oil, and a few people have said about adding chocolate chips I will definately have to give that a go next time x

    Yum. I’ll definitely be trying this one. I LOVE Banana bread! I don’t get the chance to bake often but when I do my family are all like “why can’t you do this all the time?!”
    So I’ll keep this recipe in mind!

      I love baking and but I don’t bake that often these days, I used to be always doing something when my daughter was younger, I really must get back into it x
